Grilled Fish w/ Lemon, Oil, Mint

Ingredients
- lemon, juiced
- 1/2 cup olive oil
- 1 pinch salt
- 4 large mint leaves, finely chopped
- 1 garlic clove, smashed
- 16 ounces cod fillet (or similar white fish), figure about 8 oz per person

Step 1
1. Whip the lemon juice and olive oil together in a small bowl until smooth and satiny. This will take a minute or two. Add a pinch of salt, the smashed garlic clove and the mint.Set aside.
2. Sprinkle both sides of the fish with a little bit of salt and pepper.
3. Place a sheet of aluminum foil on the grill and allow it to warm up for a minute.
4. Pour some of the olive oil mix over the fish, reserving some for once fish is done. 5. Grill the fish for about two minutes per side or until just cooked through.
6. Remove the fish to plate and drizzle with the fish with the oil, discarding the garlic clove before doing so.
