Zucchini Stuffing Surprise

Ingredients

  • 2 lbs. Zucchini, sliced
  • 1 Cup Onions, chopped
  • 1 Cup Sour Cream
  • 1 Can Cream of Chicken Soup
  • 1 Cup Carrots, finely chopped
  • 2 Pkg. (6 oz.) Stove Top Chicken Flavor Stuffing Mix
  • 3/4 Cup Margarine, melted

Preparation

Step 1

Saute zucchini and onions for 5 minutes. Drain. Mix cooked vegetables with sour cream, carrots and soup; set aside. Pour margarine over dry stuffing. Put half of the bread stuffing in the bottom of a 9" x 13" baking pan. Pour vegetable mixture over bread stuffing. Then put the other half of the bread stuffing on top. Bake at 350 degrees for 30-45 minutes or until you can see bubbles on the sides.
