Gorgonzola-Stuffed Potatoes

Ingredients
- 6 medium Yukon Gold potatoes
- 2 Tb. vegetable oil
- 2 Tb. salt
- 6 squares aluminum foil
- 1/3 c. Gorgonzola cheese, (or blue cheese)
- 1 tsp. black pepper
- 1/3 c. heavy cream
- 1/4 c. chopped chives, for garnish (opt.)

Step 1
1. Preheat oven to 350 degrees.
2. Wash and dry potatoes, and place in a large mixing bowl. Toss with oil and salt. Wrap each potato individually with aluminum foil. Place potatoes on baking sheet, and bake until a toothpick is inserted with ease, approximately 45 minutes.
3. Remove potatoes from oven, remove foil, and allow potatoes to cool enough to handle. With a knife, cut one quarter-size hole in the top of each potato. With a small spoon, hollow out each potato. Reserve the potato flesh in a separate bowl.
4. Mash potato flesh and mix with the Gorgonzola, pepper, and cream. Stuff the potato shells with the mixture. Return potatoes to baking sheet and place under broiler until golden, about 5 minutes. Garnish with chives if desired.
