Ingredients
- 1 TB olive oil
- 1/4 cup chopped green bell pepper
- 1/4 cup chopped red bell pepper
- 1 TB finely chopped red onion
- 2 tsp fresh grated ginger
- 2 cloves garlic, minced
- 2 lbs chicken breasts, cut into 1" pieces
- 2 TB chopped parsley
- 2 tsp tumeric
- 1 tsp salt
- 1/3 tsp paprika
- 1/2 (10oz) pkg. chopped frozen spinach, thawed and strained/squeezed dry

Step 1
1. Heat large skillet over medium heat. Add bell peppers and saute 1 minute. Add onion and saute 1 minute.
2. Reduce heat, stir in ginger and garlic, cook about 1 minute.
3. Add chicken, parsley, salt, tumeric and paprika; cook about 5 minutes. Stir in spinach and reduce heat to low. Cook 10 minutes or until chicken is cooked through.
