Ingredients

  • 1 c. all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 4 Tbl. coconut oil, melted and slightly cooled
  • 1/2 c. brown sugar
  • 1/4 c. sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 c. shredded zucchini, peeled
  • 2 c. quick-cooking oats
  • 1/2 c. sweetened coconut flakes
  • 3/4 c. semi-sweet chocolate chips

Step 1


Preheat oven to 350 degrees. In a medium bowl, whisk together the flour, baking soda and salt; set aside. In a large mixing bowl, combine the melted coconut oil and sugars and mix until combined. Add the egg and vanilla. Next, add the shredded zucchini and mix until combined. Add the dry ingredients to the wet ingredients and mix until almost combined. Stir in the oats, coconut and chocolate chips until just combined.
Drop cookie dough by heaping Tablespoonfuls, 2-inches apart, onto a greased baking sheet. Bake for 9-10 minutes or until cookies are slightly golden around the edges. Remove from oven and cool. Makes: 2½ dozen cookies.
