Frozen Margarita

Icy cold and refreshing, frozen margaritas are a favorite cocktail on a hot summer day. They are great for a party because you can blend them by the pitcherful, ready to pour as your guests arrive.

- Simple Syrup:
- 2 fl. oz. white tequila
- 2 Tbs. triple sec
- 2 Tbs. fresh lime juice
- 1 tsp. simple syrup, (see related recipe at left)
- 1 cup ice cubes
- 1 c. water
- 1 c. sugar

Directions:
Pour the tequila, triple sec, lime juice and simple syrup into a blender containing the ice cubes. Blend well. Pour into a chilled margarita glass or wineglass.
Serves 1.
For the Simple Syrup:
Because it is difficult to dissolve sugar in cold liquid, bartenders use a sugar solution called simple syrup. It is easy to prepare and keeps 2 months or longer in the refrigerator.
In a small saucepan over medium-high heat, bring the water to a simmer. Add the sugar and stir until it completely dissolves. Remove the pan from the heat and set aside to cool to room temperature. Pour the syrup into a clean 1-pint bottle, cap it and refrigerate until ready to use. Makes 1 1?2 cups.
