Ingredients

  • 1 quart vanilla or any flavor ice cream(4 cups)
  • chocolate cookies
  • 1/2 cup marg
  • scant 1 cup light br sugar
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • scant 1/2 cup cocoa
  • 1/2 tsp instant coffee granules
  • 1/2 tsp vanilla extract
  • 2 cups flour divided
  • 6 or more Tbs soy milk,divided

Preparation

Step 1

In a lArge mixing bowl,beat together the marG and light br sugar for 2-3 min. Add the baking powder,salt,cocoa,coffee and vanilla. Mix until incorporated. mix in 1 cup of flour,followed by 2 Tbs of soy milk,and then add the remaining 1 cup of flour and another 2 Tbs soy milk,mixing well until no dry ingrd remain. This can take up to 5 min. Dough should be soft and not sticky. Add more soy milk if necessary one tsp at a time until the dough comes together.
Divide dough in half. Roll dough out to approx 1/4" or less thickness Cut the dough into 2x4" rectangles.Transfer to a baking sheet lined with baking paper.Using a skewer,poke a pattern of holes on each cookie's surface to mimic the real thing.Continue with the rest of the dough,rolling,cutting and poking,rerolling the scraps as you go along.Place the baking sheets in the freezer for 10 min before baking.
Meanwhile,preheat oven to 350. Bake for 7-8 min or until cookies are just set. Do not overbake,. Remove from oven and allow to cool for a few min. Freeze cookies for an hr or more before assembling the sandwiches.
For Ice Cream filling
Lina a 9x13 baking pan with parch paper. Slightly soften the ice cream and spread into prepared pan.Freeze overnight.
To assemble
Match up cookies of the same size and have them laid out and ready for the ice cream.
Working quickly,place the baking paper with the ice cream on a flat surface or cutting board. Cut the ice cream into 2x4" rectangles.
Using a spatula,place a rectangle of ice cream between two chilled cookies and press the cookies lightly to adhere. Return the sandwiches to the freezer for at least 30 min. Store in a container,with plastic or parch paper between the
layers or in a ziploc bag.
To save time,you can use a cookie cutter to cut circle or square shapes of the cookies and the ice cream,instead of measuring and cutting. Cookies can be made in advance and frozen before assembling the sandwiches.
