Ingredients

  • Casserole:
  • 1 cup dice carrots
  • 3/4 cup chopped onion
  • 1/2 cup chopped celery
  • 1/4 cup chicken broth
  • 1 can cr of chicken soup
  • 1 cup sour cream
  • 3 cups cubed cooked chicken
  • 1/2 cup (4 oz) sliced mushrooms
  • 1 tsp worcestershire sauce
  • 1 tsp salt
  • 1/8 tsp pepper
  • Confetti Topping:
  • 1 cup sifted flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs slightly beaten
  • 1/2 cup milk
  • 1 tbs chopped red pepper
  • 1 tbs chopped red pepper
  • 1 tbs chopped yellow pepper
  • 1 1/4 cups of cheddar cheese, divided

Preparation

Step 1

For casserole:
In saucepan combine carrots, celery, onion and chicken broth and simmer 20 minutes. In 3 quart casserole, mix soup, sour cream, chicken, mushrooms, worcestershire sauce, salt and pepper. Add simmered vegetables ad liquid; mix well.

For topping:
In mixing bowl combine flour, baking powder and salt. Add eggs, milk, peppers and 1 cup of cheese. Mix until just well blended. Drop tablespoons of topping onto casserole around edges and bake @ 350 for 40-45 min. or until golden brown. Sprinkle with remaining cheese and heat until melted.
