Ingredients
- 1/2 c. all-purpose flour
- 2 Tb. chili powder
- 2 tsp. cumin
- 2 tsp. coriander
- 6 (3 oz.) catfish fillets
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/4 c. vegetable or peanut oil
- 8 (6") fajita-size corn or flour tortillas
- Toppings: salsa, sour cream, lime wedges, fresh cilantro sprigs

Preparation
Step 1
1. Combine first 4 ingredients in a bowl.
2. Cut catfish into 1 1/2" pieces. Sprinkle with salt and pepper; toss in flour mixture, shaking off excess.
3. Cook catfish, in batches, in hot oil in a large nonstick over medium-high heat 2-3 minutes on each side or until done. Transfer catfish to a platter; serve with tortillas and desired toppings.
