- 1 medium head cauliflower
- 1 egg
- 3/4 teaspoon salt, divided
- 1/4 teaspoon pepper
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon minced garlic
- 1/2 cup Parmesan cheese

Step 1
1. Heat your oven to 425 degrees F. Line your baking pan with parchment paper and set aside.
2. Clean and dry cauliflower. Remove any leaves and if the stem is still attached, cut it off, leaving no more than 1" of the stem. Chop into sizes that will fit into a food processor. Pulse chop unit all pieces are finely chopped.
3. Place the cauliflower in a microwave safe bowl. Add 1/2 tsp salt, toss to combine and microwave for 5-7 min or until tender.
4. Place a tea towel or cheese cloth over a fine mesh strainer. Pour the cauliflower into the towel/cloth combo and allow to cool and drain for 3-5 minutes or until it is cool enough to touch. Twist and squeeze well to removed as much moisture from the cauliflower as possible.
5. Once the excess fluid is squeezed out, return the cauliflower to the bowl. Add egg, remaining salt, pepper, garlic, basil, oregano and cheese. Mix until you can form a "dough ball".
6. Place the "dough ball" on the pan and form to the shape you want. Lift the crust using the parchment paper and place the pan in the oven for 3-4 minutes.
7. Pull out hot pan and place the crust that is on the parchment paper. Cook for 8 minutes, then top with cheese and other ingredients. And cook for 8-10 more until done.
