TURKEY ENCHILADAS

Ingredients
- 1 T butter or oil
- 1 c chopped red onion
- 1 clove minced garlic
- 1 16oz can tomatoes, with liquid, chopped
- 1 8oz can tomato sauce
- 1/4 c chopped green chilis or 1 fresh jalapeno chili, chopped
- 1 t ground cumin
- 1/2 t oregano
- 1/2 t chili powder
- 12 corn tortillas
- 2 c shredded cooked turkey
- 2 c grated Monterey jack cheese
- 1 c sour cream
- 1 avocado, sliced

Preparation
Step 1
Heat butter in saucepan, and saute onion and garlic until soft
Add next seven ingredients and simmer 20 minutes. Dip each tortilla in tomato mixture to soften., Place some shredded turkey and grated cheese on each tortilla. Roll up and place seam-side down in baking dish.
Blend sour cream into tomato mixture and pour over enchiladas. Sprinkle with remaining cheese. Cover and bake 30 minutes at 350 degrees. Garnish with avocado. Can also be made with chicken.
