Ingredients

  • 1/2 c. flour
  • 2 tablespoons chopped fresh rosemary
  • 2 tsp. salt
  • 1 tsp. pepper
  • 4 defrosted chicken breasts
  • 3 tablespoons olive oil
  • 6 cloves of garlic, minced
  • 1 c. low sodium chicken broth
  • finely grated zest and juice of 1 lemon

Preparation

Step 1

On a plate, mix flour with 1 tablespoon rosemary, salt and pepper. Dredge the chicken in the seasoned flour, shake to remove the excess flour.

Warm enough oil to cover large skillet over medium high heat. Add chicken and cook until golden. Remove to a plate.

Place same skillet (with leftover chicken dripping) over low heat and warm 1 tablespoon of oil. Add garlic and remaining rosemary, stir for a minute. Add chicken broth and lemon zest, juice. Stir, scraping up the pan drippings from the chicken.

Raise heat and boil until sauce has thickened. Add a little flour to thicken.

Pour half of the juice on the bottom of a glass dish. Place chicken in the pan. Pour remaining sauce over chicken and cover with foil. Cook until thermometer reads 165 degrees F. (about 30 min) in a 400 degree oven. Serve.
