Ingredients

  • 1 Tbs. vegetable oil
  • 1 lb. ground turkey
  • 1 medium onion, chopped (about 1 cup)
  • 2 Tbs. chili powder
  • 1 tsp. ground cumin
  • 1/2 tsp. ground black pepper
  • 1 3/4 cup chicken broth
  • 1 cup chunky salsa
  • 1 16-oz. can whole kernel corn, drained
  • 1 15-oz. can black beans, rinsed and drained

Preparation

Step 1

Heat the oil in a 4 qt. saucepan over medium high heat. Add the turkey and onion, chili powder, cumin and black pepper. Cook until turkey is well done. Drain any grease.

Stir in the broth, corn and beans. Heat to a boil. Reduce heat to low, cover and cook for 30 minutes.
