  • 1 Package refrigerated pie dough
  • 4 oz fresh spinach
  • 1/4 cup grated sharp white cheddar
  • 1/4 cup grated swiss
  • 6 strips crisp crumbled bacon
  • 4 eggs
  • 1/4 half and half

Step 1

PIE SHELL

Cut six 5" round pie dough. Place in mini pie plates. Dock the bottom with fork. Tightly press foil into each pie shell. Bake @350 for ten minutes. Set aside and allow to cool.

FILLING

Mix eggs with half and half. set aside.
Combine two cheeses.
Sprinkle cheese into each shell followed by bacon and then spinach.
Pour egg mixture into each shell till almost to top rim.
(Approx. 1/3 cup)

BAKE

@425 for 25 to 30 minutes.
