Ingredients

  • 1 1/2 lbs. Portobello mushrooms, cut into 1/2 inch pieces
  • 1 (19 oz.) can red kidney beans
  • 1 (28 oz.) can diced tomatoes (Italian Style)
  • 2 medium onions, diced
  • 2 cloves, garlic, chopped
  • 2 tbsp. extra virgin olive oil
  • 1 tbsp. chili powder
  • 1/4 tsp. ground cayenne pepper
  • 1/2 tsp. ground black pepper
  • salt to taste

Step 1

Cook the onions on medium heat in a large pot with oil. Once tender, add chili powder, garlic, and cayenne pepper. Add the mushrooms and cook for 10 minutes. Mix in the beans and tomatoes and add salt and pepper. Reduce the heat, cover pot and simmer for 40 minutes.
