Mango Bread

This is a moist bread that is not too sweet. The flavor of the mangoes are really brought out by the hint of cinnamon in this recipe.

Ingredients
- 2 1/2 cups mangoes, peeled, seeded, and chopped into small chunks (2 large mangoes)
- 1/2 cup sour cream
- 1 tsp lemon juice
- 2 medium eggs
- 1/2 cup vegetable oil
- 2 cups all purpose flour
- 2 tsp ground cinnamon
- 2 tsp baking soda
- 1/2 tsp salt
- 1 1/4 cups sugar

Preheat the oven to 350 degrees Fahrenheit. Spray non-stick cooking spray into the bottom half of two glass bread pans. Sift together the dry ingredients in a large bowl. In a small bowl, beat together the eggs and vegetable oil until the mixture is combined. Add the egg mixture to the dry mixture just until it is combined - Do NOT over mix. Add the lemon juice to the mangoes and fold the mangoes into the bread mixture - Again, Do NOT over mix. Finally, gently fold in the sour cream. Pour the mixture evenly into two glass bread pans. Bake at 350 degrees Fahrenheit for 40 minutes or until a toothpick inserted in the center of the bread comes out clean.
