Ingredients
- 3 Tb. butter
- 4 slices thick-cut smoked bacon, cubed
- 2 large onions, sliced
- 2 deep-dish pie crusts
- 2 c. halved cherry tomatoes
- 2 (6 oz.) pkg. goat cheese
- 2 c. watercress
- 16 eggs
- 1 1/2 c. milk
- 4 tsp. salt
- 2 tsp. pepper

Preparation
Step 1
1. Preheat ovent o 350 degrees.
2. Melt butter in a medium saucepan and add bacon. Cook on medium heat until bacon is slightly browned. Add onions and continue to cook until soft, about 15 minutes.
3. Divide onion-bacon mixture evenly between two pie crusts. Do the same with cherry tomatoes, goat cheese, and watercress.
4. In a large bowl, whisk together eggs, milk, salt and pepper. Divide mixture and pour into pie crusts.
5. Bake quiches until centers are set and tops are golden brown, 50-55 minutes.
