Curried Beef, Pork or Chicken

Ingredients
- 1 1/4 lb. lean beef, pork or chicken, cubed
- 2 oz. corn flour
- 4 Tb. ghee or clarified butter
- 4 garlic cloves, sliced
- 1 (2") cube fresh ginger, sliced
- 1 Tb. hot curry
- 2 onions, sliced
- 2 oz. Mongolion fire oil
- 1 c. chicken stock, or water
- 4 bay leaves
- 8 oz. pineapple chunks, and it's juice
- 4 oz. oyster mushrooms, sliced
- 6 oz. buttermilk
- 4 oz. sour cream
- salt

Preparation
Step 1
Preheat to 375 degrees. Toss meat in corn flour until evenly coated. Heat ghee or butter over low heat in large skillet with garlic, ginger, curry, onion and Mongolion oil. Increase heat to Medium high and add meat. Stir-fry about 5 minutes, adding just enough stock or water to keep meat moist. Add bay leaves and the remaining stock or water. Transfer mixture to casserole dish. Bake 20 minutes. Add pineapple and juice. Bake another 20 minutes. Add mushrooms, buttermilk, sour cream and salt. Bake for an additional 20 minutes. Check meat for tenderness. Season to taste. Serve with rice.
