Ingredients

  • Filling:
  • 3 cups of combined fresh mixed berries (blackberries, raspberries, blueberries), rinsed and 3/4 sugar
  • Topping:
  • 1 cup flour
  • 3/4 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup milk
  • 1 stick unsweetened butter, melted

Preparation

Step 1

Preheat oven to 375 and butter an 8x8 inch baking dish.

Filling: Pout the berries into a large bowl. Add the sugar. Stir until the sugar is combined. Set aside.

Topping: Sift the flour into a large bowl. Add the sugar, baking powder and salt. Whisk to combine.
Pour in the milk. Stir until the ingredients are all combined. Pour the melted butter into the batter. Stir until the butter is combined. Pour the batter into the prepared baking dish.

Assemble the Cobbler: Drop spoonfuls of the berry mixture on top of the batter - do not stir.
Bake for 35 minutes or until golden brown. Rotate the dish 180 degrees at halfway point of baking time.
Remove from the oven and cool for 5 to 10 minutes.
Serve plain or with ice cream or whipped cream.
