Ingredients

  • 1 1/2 cups granulated sugar
  • 1 1/3 cups (2 2/3 sticks) salted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1 teaspoon lime zest
  • 2 large eggs
  • 3 tablespoons whole milk
  • 4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon kosher salt

Step 1

For the cookie crust: Preheat the oven to 350 degrees F.

In a large bowl, cream the granulated sugar, butter, vanilla and lemon and lime zests thoroughly. Add the eggs and beat until light and fluffy. Add the milk and mix. In a medium bowl, sift together the flour, baking powder and salt. Blend the flour mixture into the butter and sugar mixture. Divide the dough in half, flatten into discs and wrap with plastic wrap. Refrigerate for 1 hour or freeze for 20 minutes.

Roll out half of one disc on a well floured, wooden surface (cutting board). Cut out desired shapes and transfer to cookies sheet. Chill for a few minutes before baking. Repeat with the rest of the dough. Work quickly and keep dough chilled between rolling.

Bake for 8 minutes, let cool before decorating.
