Ingredients
- 2/3 cup brown sugar
- 1/2 tsp vanilla
- 1 egg
- 1 cup self-rising flour
- 1-1/2 tsp cinnamon
- 1/2 cup buttermilk
- 2 apples, unpeeled, cored, very thinly sliced
Preparation
Step 1
Preheat oven to 350 degrees.
Mix together brown sugar & butter 2-3 minutes until light & fluffy.
Add egg & vanilla. Continue to beat until smooth. Scrape down sides as necessary.
In medium bowl, whisk together flour & cinnamon. With mixer on low speed, alternate between flour & buttermilk, beginning & ending with flour. Mix just until combined. Transfer to greased 9" cast iron skillet.
Arrange apples on top of batter in concentric circles, overlapping circles to resemble flower. Keep adding apples until entire cast iron skillet is covered.
Then sprinkle with sugar & cinnamon. Bake at 350 for approx. 30 minutes or until tests done. Serve warm.
