Ingredients

  • 6 Tb. toasted sesame oil
  • 1/4 c. smooth peanut butter
  • 1/4 c. soy sauce
  • 2 Tb. water
  • 4 tsp. minced garlic
  • 2 1/2 Tb. minced fresh ginger
  • 1/4 c. seasoned rice vinegar
  • 4 tsp. sugar
  • 1-2 tsp. Chinese chili paste, (use the larger amount for a spicier flavor)
  • 1/2 tsp. red chile pepper flakes
  • 1 tsp. chili oil
  • 2 (10 oz.) pkg. Chinese wheat or egg noodles
  • 3 c. slivered snow peas, (about 1/2 lb.)
  • 3 c. diced red bell pepper, (about 1 lb.)
  • 1 c. chopped fresh cilantro
  • 2 Tb. toasted sesame seeds
  • 3-4 c. shredded roast chicken, (or cooked shrimp)

Preparation

Step 1

1. TO MAKE THE DRESSING: In a blender or small food processor, mix all the ingredients from the sesame oil to the chili oil to a smooth consistency. This can be prepared and held in the refrigerator for up to 3 days.

2. Cook the noodles in a pot of boiling water according to pkg. directions. Drain in a colander and rinse under cold water. Drain again and toss with the snow peas and bell pepper.

3. TO SERVE: Drizzle on the sesame dressing and toss to coat. Sprinkle with the cilantro and sesame seeds. For a main course, add the chicken and toss to combine.
