Citrus Shrimp

Ingredients
- This dish gets better with time as the flavors marry.
- 10 c. water
- 4 lb. shrimp, peeled, tails removed
- 2 c. orange juice
- 1 1/4 c. lime juice
- 3/4 c. olive oil
- 8 garlic cloves, minced
- 2 c. fresh cilantro leaves, + 4 Tb. for garnish
- 1 c. diced watermelon
- 1 cucumber, seeds removed and diced
- 1 red onion, thinly sliced
- 2 Tb. lemon juice
- 4 tsp. salt
- 1 tsp. coarse black pepper

Preparation
Step 1
1. In a large pot, bring water to a boil. Add shrimp to boiling water and turn off heat. Let sit 3 minutes. Drain shrimp and rinse in cold water.
2. Coarsely chop shrimp and place in a large bowl. Add orange juice, 1 c. of the lime juice, olive oil, and garlic. Mix well. Place cilantro leaves on top of mixture, cover and refrigerate overnight.
3. When ready to serve, drain shrimp, reserving 1/4 c. of the liquid, and remove cilantro leaves. Add watermelon, cucumber, red onion, lemon juice, the remaining lime juice, the reserved liquid, salt and pepper. Mix well. Coarsely chop the remaining cilantro and toss into salad.
