Cold Avacado and Crab Soup

Ingredients
- 2 ripe avocados, peeled and pitted
- 2 cups chilled chicken stock
- 2 medium garlic cloves
- juice from 1/2 lemon, plus more to taste
- 1/2 tsp. salt
- 12 oz. crab meat
- juice from 2 limes
- 2 tbsp. olive oil
- 1/4 cup chopped cilantro
- 1/2 cup finely chopped red onion
- salt and pepper

Preparation
Step 1
Combine avocados, stock, garlic, lemon juice, and 1/4 tsp. salt in a blender until smooth. Place mixture in refrigerator.
In a separate bowl, toss crabmeat with lime juice, cilantro, and onion. Salt and pepper to taste. Place in refrigerator.
Allow both mixtures to chill completely.
Serve soup in chilled bowls with crabmeat mixture on top.
