Ingredients

  • 1 C (2-3) mashed bananas
  • 1/2 C vegetable oil
  • 1/3 C milk
  • 1/3 C chopped nuts
  • 1 egg
  • 2 C whole wheat flour
  • 1/3 C packed brown sugar
  • 1 tsp salt

Preparation

Step 1

Heat oven to 400 degrees. Line 12 medium muffin cups with paper baking cups, or grease bottoms only. Beat bananas, oil, milk, nuts and egg in medium bowl with spoon. Stir flour, brown sugar, baking powder and salt just until flour is moistened (batter will be lumpy). Spoon batter into muffin cups. Bake about 20 mins or until golden brown. Immediately remove from muffin cups.
