Ingredients

  • Beef or pork ribs (I used pork ribs from Valley Meat)
  • Weber beer can chicken rub
  • BBQ sauce - Kraft sweet brown sugar BBQ sauce

Preparation

Step 1

Make a well in the charcoal and place 2 fire starters. Light. Have bottom vent fully open and the lid open. Let heat for approximately 1 minute.

Cover ribs with Weber rub. Let set while the grill is heating.

Set heat deflector on cooking rack and place grill racks. Heat Komado to 250 degrees F. with the bottom vent open to 1-1/2" and the slider closed. Open the daisy wheel fully. Once the grill is ready you may need to close the bottom vent to 1/2" and play with the daisy wheel to keep the heat steady at 250.

Place ribs on grill for approximately 2 hours. Keep grill at 250 (see above for changes to daisy wheel and bottom vent).

Spritz ribs with water. Close the lid and cook for another 30 minutes.

Spritz ribs with water a second time. Close the lid and cook for another 30 minutes. This makes a "bark" on the outside of the ribs.

Take ribs off grill and brush with BBQ sauce. Wrap in 2 layers of heavy duty aluminum foil and place on grill for 1 hour.
