Ingredients
- Filling:
- Crust: 16 (2") chocolate-wafer cookies, finely ground
- 3 Tb. butter, melted
- 1 tsp. ground cinnamon
- 3 egg whites
- 2/3 sugar
- 1/2 tsp. ground cinnamon
- 1/2 c. semisweet chocolate chips
- 1/2 c. chopped pecans

Step 1
For crust, combine all ingredients in a medium bowl; stir until well blended. Press about 2 tsp. mixture into bottom of each paper-lined muffin tin.
Preheat oven to 325 degrees. For filling, beat egg whites in a large bowl until foamy. Add sugar and cinnamon; beat until stiff. Fold in remaining ingredients. Spoon about 2 Tb. filling into each muffin tin. Bake 30-35 minutes or until light brown and set in center. Cool completely in pan. Store in an airtight container.
