Ingredients

  • 2 eggs
  • 1/8 tsp. salt
  • 1/2 c. granulated sugar
  • 1/3 c. flour
  • 3 Tb. cocoa
  • 1/2 c. butter , melted and cooled
  • Grand Marnier liqueur

Preparation

Step 1

Preheat oven to 400 degrees. In a large mixing bowl, combine eggs and salt. Gradually beat in sugar until mixture is thick and lightens in color (about 5 minutes). Combine flour with cocoa. Fold flour mixture into egg mixture a few tablespoons at a time. Spoon 1 Tb. of batter into each shell of a greased and floured Madeleine pan. Bake 8-10 minutes or until a cake springs back when lightly touched. Immediately remove from molds and cool on wire racks. Sprinkle Madeleines with liqueur.
