  • Brulee:
  • 1 qt. whipping cream
  • 1 c. packed brown sugar, divided
  • 2 Tb. granulated sugar
  • 8 oz. premium quality milk chocolate, chopped
  • 7 egg yolks
  • 1 tsp. vanilla extract
  • Sweetened Whipped Cream:
  • 1 c. whipping cream
  • 1/2 c. granulated sugar
  • 1 1/2 tsp. vanilla

Step 1

For brulee, preheat oven to 350 degrees. In a heavy saucepan over medium-high heat, bring cream, 1/2 c. brown sugar, and granulated sugar to a boil. Add chocolate and remove from heat; stir until chocolate melts. Allow to cool slightly. In a medium bowl, whisk egg yolks and vanilla until blended. Whisk 1/4 c. chocolate mixture into eggs. Pour in remaining chocolate mixture and whisk until blended.

Pour mixture through a strainer into a 13x9" glass baking dish. Place dish in a large baking pan. Add water to larger pan to come halfway up sides of baking dish. Bake 1-1 1/2 hours or until knife inserted in center comes out clean. Cool to room temperature. Cover with plastic wrap and refrigerate 6-8 hours.

Set oven to broil. Pat top of dessert with paper towel to remove excess moisture. Cover top evenly with remaining 1/2 cup brown sugar. Place dessert under broiler just until sugar begins to melt, about 5 minutes. Watch dessert carefully as the sugar will melt very quickly.

For sweetened whipped cream, beat all ingredients in a large bowl at high speed with an electric mixer until soft peaks form. Serve brulee warm or chilled with a dollop of sweetened whipped cream.
