Ingredients
- 4 lb. pork loin roast
- 1/2 cup dark brown sugar
- 2 tsp. smoked paprika
- 1 tsp. ground allspice
- 1 tsp. granulated garlic
- 1 tsp. granulated onion
- 1 tsp. ground cumin
- 1 tsp. ground coriander
- 3 tbsp. salt
- 2 tbsp. fresh ground pepper
- 2 tsp. dried thyme
- 12 fluid ounces of dark beer
- 1 - 14 oz. bottle of your favorite barbeque sauce
- 1 cup chicken stock
- 1/4 cornstarch

Step 1
Combine sugar, through dried thyme in a bowl; whisk to combine.
Cut the pork into 4 sections and rub the spice mixture all over each piece.
Place the pork in the slow cooker along with the beer and chicken stock.
Cook the pork on low for 8 hours.
Remove the pork from the slow cooker and shred with forks. Strain the juices through a fine sieve into a clean sauce pot. Bring the juices to a boil and whisk in 1/4 cup of cornstarch. Once the mixture has thickened, add the shredded pork and serve on rolls.
