These sweet, delicate cookies received highest marks from the "Cottage Living" Test Kitchens staff. We're not sure whether it's the subtle hint of lime or the chewy butteriness that makes them so irresistible, but we know you'll find them a hit.

Ingredients

  • 3/4 c butter
  • 2 c sugar
  • Zest of 2 limes, (~2T)
  • 1/2 c sour cream
  • 2 lg egg yolks, @ room temperature (remove eggs from refrigerator & place them in a bowl for 30 min)
  • 1 T fresh lime juice
  • 1/2 t kosher salt
  • 2 t baking powder
  • 2.5 c c flour

Step 1

1. Beat butter, 1.5c sugar & lime zest on med speed w/an electric mixer fitted w/a paddle until lightly creamed.
2. Add sour cream, & beat just until blended.
3. Stir in egg yolks & lime juice, scraping down sides of bowl.
4. Add salt, baking powder, & flour, & beat until blended.
5. Chill dough 1 hour.
6. Preheat oven to 350F.
7. Line 2 baking sheets w/parchment paper.
8. Place remaining 1/2c sugar in a small bowl.
9. Shape dough into 1" balls.
10. Roll in sugar & place on baking sheets.
11. Bake @ 350F for 20-25 min or until edges begin to brown; bottoms will look light golden. (For crispier cookies, bake a few additional minutes.)
12. Remove to wire racks to cool.
