Ingredients
- 3 lbs. lean ground beef
- 4 large tomatoes
- 1/4 cup white vinegar
- 3 tbsp. granulated sugar
- 2 tsp. salt
- 2 tbsp. canola oil
- 1 large yellow onion, diced
- 2 garlic cloves, minced
- 2 large carrots, finely diced
- 1 small can tomato paste
- 1/4 cup Worcestershire sauce
- 1 -2 tsp. hot sauce
- 1 tsp. ground coriander
- 1/2 tsp. smoked paprika
- 1/2 tsp. chili powder
- 2 tsp. dried oregano
- 1 tsp. dried marjoram
- salt and pepper to taste

Step 1
Blanch the tomatoes in boiling water; remove the skin - cut in half and add vinegar and sugar in blender until smooth; set aside.
Heat the oil in a large skillet over medium heat; add onion, garlic and carrots and cook for 7 minutes. Place the cooked vegetables in the slow cooker and return the pan to the stove.
Crumble the beef into the pan and cook until there is no visible pink; drain off any fat and add to the slow cooker along with the remaining ingredients. Cook on high for 5 hours - serve on rolls.
