Ingredients
- 4 (6-oz.) boneless skinless chicken breast halves
- 2 teaspoons dried basil
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 1 cup diced yellow bell pepper
- 1 (16-oz.) can cannellini beans or other white beans, drained and rinsed
- 1 (14.5-oz.) can low sodium diced tomatoes, undrained

Preparation
Step 1
Place chicken in a slow cooker; sprinkle with basil, salt and black pepper. Add bell pepper, beans and tomatoes. Cover and cook on LOW for 8 hours.
SERVING SUGGESTION: A big salad tossed with Easy Balsamic Vinaigrette (see recipe). Add garlic toast.
GLUTEN FREE: Make sure beans and tomatoes are gluten free.
