Ingredients
- Water/oil mixture
- 2 pork tenderloins (1 1/4 pounds total)
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1 tablespoon rice vinegar
- 1/2 tablespoon honey
- 1 small Napa cabbage (about 1 pound), quartered, cored, and thinly sliced
- 1 red apple, cut into thin wedges
- 1/4 cup chopped cilantro

Preparation
Step 1
Preheat oven to 400 degrees. Heat a large oven-proof skillet coated with water/oil mixture over medium-high heat. Season the pork with salt and pepper and cook, turning occasionally, until browned, 6 to 8 minutes. Transfer skillet to the oven and roast until pork is cooked through, 12 to 14 minutes. Let rest at least 5 minutes before slicing. Meanwhile, in a large bowl, combine olive oil, vinegar, honey and salt and pepper to taste. Add the cabbage and apples and toss; let sit for at least 5 minutes, tossing occasionally. Fold in the chopped cilantro and serve with the pork.
SERVING SUGGESTION: Add steamed red skinned potatoes and steamed baby carrots.
GLUTEN FREE: No changes necessary.
