Ingredients
- Bake Parmesan cheese rounds up to 3 days before your get-together, and store in an airtight container.
- 2 c. finely chopped chicken
- 1/2 c. arugula, chopped
- 1/4 c. Caesar dressing
- 2 Tb. lime juice
- freshly ground pepper to taste
- 1 (5 oz.) pkg. shredded Parmesan cheese
- parchment paper
- 2 Tb. crushed Parmesan pita chips

Preparation
Step 1
1. Stir together chicken and next 3 ingredients. Stir in freshly ground pepper to taste. Cover and chill up to 2 days.
2. Preheat oven to 350 degrees. Spoon Parmesan cheese by rounded teaspoonfuls, 1" apart, onto parchment paper-lined baking sheets, forming mounds. Bake 10-12 minutes or until melted, bubbly, and golden brown.
3. Spoon chicken mixture onto Parmesan cheese rounds. Top with crushed pita chips.
