Ingredients

  • Using precooked chopped chicken makes this dish even quicker to prepare.
  • 2 c. chopped roasted skinless, boneless chicken breast, (about 2 breasts)
  • 2 c. quartered small strawberries, (aobut 1 pint)
  • 1/3 c. finely chopped celery
  • 1/3 c. finely chopped red onion
  • 2 Tb. golden raisins
  • 1 Tb. sesame seeds, toasted
  • 1 Tb. chopped fresh or 1 tsp. dried tarragon
  • 1 Tb. extra-virgin olive oil
  • 1 Tb. balsamic vinegar
  • 1/2 tsp. paprika
  • 1/8 tsp. salt
  • 1/8 tsp. black pepper
  • 4 c. gourmet salad greens

Step 1

Combine first 5 ingredients in a large bowl. Combine sesame seeds and next 6 ingredients (through pepper) in a small bowl, stirring well with a whisk. Pour over chicken mixture; toss well to coat. Cover and chill 1 hour. Serve over salad greens.
