Ingredients

  • 1 1/4 cups diced yellow onion
  • 1 clove garlic, minced
  • 4 ribs celery, diced
  • 12 oz. baby red potatoes, cut into pieces
  • 1 tea. Old Bay seasoning
  • 1/2 tea. salt
  • 3 Tbsp. cornstarch
  • 2 cups chicken broth
  • 1 lb. halibut fillets, cut into 1" pieces
  • 1 tea. lemon zest
  • 1 cup half-n-half
  • chopped parsley

Preparation

Step 1

Combine onion, garlic, celery, potatoes, Old Bay and salt in a slow cooker. In a bowl, stir together cornstach, broth and 1 1/2 cups water and pour over vegetables. Cover and cook until potatoes are tender (8 hours on low).

Adjust heat to high, stir in fish, lemon zest and half-n-half and cook until fish is cooked through (about 20 minutes.

Sprinkle with parsley
