Ingredients

  • 1 Tbsp. vegetable oil
  • 1 1/2 lb.s flank steak, trimmed of fat, cut into 2 pieces
  • 1 large yellow onion, sliced 1/2" thick
  • 1 green bell pepper, sliced 1/2" thick
  • 1 red bell pepper, sliced 1/2" thick
  • 2 cloves garlic, minced
  • 1 28-oz. can whole tomatoes
  • 3 Tbsp. tomato paste
  • 1/4 cup sofrito
  • 1 Tbsp. sugar
  • 1 1/2 tea. ground cumin
  • 1 tea. dried oregano
  • 1 bay leaf
  • 1/2 ta. salt

Preparation

Step 1

Heat oil in large nonstick skillet over med. heat. Add steak and brown well on both sides, about 5 minutes.

Transfer to a slow cooker with all remaining ingredients.

Cook until meat is fork-tender, 10-12 hours on low.

Remove meat, shred and return to stew.
