  • 1 cup lentil, rinsed
  • 6-7 cups water
  • 2-3 carrots, shredded
  • 1 medium onion, chopped
  • ~1 lb (2 medium) tomatoes, cut
  • Fresh spinach, de-stemmed and chopped
  • 1 clove garlic

Step 1

Cook lentils for 45 minutes to 1 hour. Shred carrots and put in soup. Saute onion and garlic in light olive oil, 10 minutes. Put in soup. Saute tomatoes, 3 to 4 minutes. Put in soup. Let cook additional 20 minutes. Add pepper. Add spinach and cook additional 4 minutes.
