Ingredients
- 1 teaspoon olive or coconut oil
- 1 teaspoon asian dark sesame oil
- 4 cups coleslaw mix
- 1 bunch scallions, sliced
- 1/4 teaspoon red pepper flakes
- 2 cups finely chopped cooked chicken
- 2 tablespoons chopped unsalted dry roasted peanuts (cashews)
- juice of 1/2 lime
- 2 teaspoons low sodium soy sauce (coconut aminos)
- 1/4 cup chopped fresh basil
- lettuce leaves

Step 1
Heat olive oil and sesame oil in a large nonstick skillet over medium high heat. Add the coleslaw mix, scallions, and red pepper flakes, cook, stirring frequently, until the cabbage begins to wilt, about 5 minutes.
Stir in the chicken, peanuts, lime juice, and soy sauce. Cook, stirring frequently, until heated through, about 5 minutes. Stir in the basil.
Top the lettuce with the chicken mixture and roll up.
