Ingredients
- 1 medium onion chopped
- 1 Tablespoon Extra virgin olive oil
- 1 quart of tomato juice
- 1 (12oz) can of tomato paste
- 2 About 2 tbsp vinegar (can use apple cider) pour for 3 sec
- Garlic to taste (fresh or powder; or both)
- Salt and pepper to taste
- oregano to taste
- crushed red pepper to taste (2-3 dashes)
- brown sugar to taste (2 handfuls)

Step 1
The sauce should have some sweetness to it.
In a saucepan (10qt) put in the evoo in bottom to cook onion. The add the onion and cook on med/high. Once the onion is tender and starting to brown add a few cloves of fresh garlic. If you dont have fresh dont to that step. Let that simmer a few secs. Then on med heat add the tomato juice and paste. Next add vinegar and brown sugar. After that add oregano, garlic powder, salt and pepper(cover the top of the sauce generously) Stir all together. Let sit and occasionally stir until the paste is melted. Once there are no more lumps of paste taste. At this point you may need to add more ingredients to taste.
