Ingredients
- 1/2 tsp grated lemon zest
- 1 1/2 tbsp lemon juice
- 1 1/2 tbsp olive oil
- 1/8 tsp ground cumin
- 1/8 tsp ground ginger
- 1/8 tsp salt
- 1/8 tsp pepper
- 1/2 pinch cinnamon
- 1 cup cooked couscous
- 1 cup shredded cooked chicken
- 1/2 cup diced sweet red pepper or sweet orange pepper
- 2 tbsp mixed olives, (green and black)
- 1 1/2 tbsp. raisins
- 1/2 green onion, sliced
- small fresh mint leaves, (optional)

Step 1
In large bowl, whisk together lemon zest, lemon juice, oil, cumin, ginger, salt, pepper and cinnamon.
Add couscous, chicken, red pepper, olives and raisins; toss to coat. Sprinkle with green onion; garnish with mint (if using).
