  • 1/2 tsp grated lemon zest
  • 1 1/2 tbsp lemon juice
  • 1 1/2 tbsp olive oil
  • 1/8 tsp ground cumin
  • 1/8 tsp ground ginger
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1/2 pinch cinnamon
  • 1 cup cooked couscous
  • 1 cup shredded cooked chicken
  • 1/2 cup diced sweet red pepper or sweet orange pepper
  • 2 tbsp mixed olives, (green and black)
  • 1 1/2 tbsp. raisins
  • 1/2 green onion, sliced
  • small fresh mint leaves, (optional)

Step 1



In large bowl, whisk together lemon zest, lemon juice, oil, cumin, ginger, salt, pepper and cinnamon.

Add couscous, chicken, red pepper, olives and raisins; toss to coat. Sprinkle with green onion; garnish with mint (if using).
