Ingredients
- 2 egg yolks
- 1 tsp fresh lemon juice
- dash of hot pepper sauce
- 2 tsp water
- salt
- freshly ground black pepper
- 1 stick melted butter

Preparation
Step 1
in stainless steel bowl set over pot of simmering water
whisk egg yolks w/ lemon juice, hot pepper sauce & water, until pale
yellow in color
season w/ S & P
Be careful not to let bowl touch water.
remove bowl from pot & whisking vigorously, add butter, 1 tsp at a time,
until all is incorporated
