Ingredients

  • 1/4 cup olive oil
  • 1 large sweet onion, chopped
  • 2 tsp garlic, minced
  • 1 eggplant, peeled and chopped
  • 1 large zucchini, chopped
  • 2-3 cups mushrooms, sliced
  • 1 can stewed tomatoes
  • salt and peppper
  • 1 tsp. parsley, oregano and basil
  • 1/4 - 1/2 tsp red pepper

Preparation

Step 1

Saute onion in oil for a few minutes, add eggplant and zucchini and simmer a few more minutes. Add garlic, tomatoes, mushrooms and spices and simmer for about 5 - 10 minutes.

Serve as a side or over pasta. If using for pizza, use slotted spoon to strain some of the liquid. Put on pizza shell and then add parmesan and mozzarella. Bake at 400 for 20-30 minutes.
