Ingredients

  • 2 cups apple juice
  • 3 tbs powdered gelatin
  • 2 cups superfine sugar - divided
  • 1 1/2 cups apricot preserves

Preparation

Step 1

Put half the apple juice into a mixing bowl, then sprinkle the gelatin over the surface, making sure the powder is absorbed. Set aside for 10 mins.
Meanwhile put the remaining apple juice & half the sugar (1 cup) into a heavy saucepan.
Boil, stirring for 5 -6 mins or til the sugar has dissolved.
Whisk in the preserves, then return to boil & cook for 3-4 mins til the mixture is thick & syrupy.
Whisk the gelatin mixture into the syrup til it dissolves.
Pour the mixture through a fine mesh strainer into a bowl.
Transfer it to a 10 x 7 non stick cake pan.
Chill in the fridge til it is set, abt 3 - 4 hours.
Spread the remaining sugar over a large baking sheet
Cut the fruit gelatin into 30 squares & remove them from the pan w a spatula.
Toss in the remaining sugar to coat just before serving.
Serve or store in airtight container in a cool place for up to 5 days
