Roasted Cauliflower with Garlic and Anchovies

Ingredients
- 2 firm heads cauliflower
- Olive Oil
- 2 cloved garlic
- 1 tsp Kosher salt
- 1/2 tsp freshly ground pepper
- 4-6 anchovy filets
- Freshly squeezed lemon juice
- 2 tbs chopped parsley
- Pecorino Romano cheese grated

Preparation
Step 1
Roast
Preheat oven to 425 degrees.
Trim cauliflower into florets and toss with 2 tbs olive oil.
Spread on rimmed baking sheet and roast until tender and browned in many spots tossing once or twice (25-30 minutes)
Mash
Using a morar and pestle mash garlic and salt to a paste.
Drop in pepper and anchovies and mash.
Work in 2 tsp lemon juice and 1/4 cup olive oil.
Toss
Put roasted cauliflower into a bowl and toss with anchovy sauce.
Add additional lemon juice or olive oil to taste.
Sprinkle with parsley and cheese.
