Ingredients
- 1/3 C extra-virgin olive oil
- 1/4 C fresh lemon juice
- 1 TBL water
- 1 TBL minced garlic
- 1 TBL minced shallot
- 3/4 tsp hot red-pepper flakes
- 3/4 C chopped flat-leaf parsley
- 4 (6-8 oz) halibut steaks (3/4 to 1"
- thick)
- 1 TBL vegetable oil

Preparation
Step 1
Whisk tog. olive oil, lemon juice, water, garlic, shallot, red-pepper flakes
& 1/2 tsp each of S & P until salt has dissolved.
Stir in parsley.
Let chimichurri stand 20 in.
Meanwhile, prepare grill for direct-heat cooking over med. hot charcoal
(med heat for gas.
Pat fish dry, then brush w/ veg. oil & sprinkle w/ 1/2 tsp salt & 1/4 tsp
pepper
Oil grill rack, then grill fish covered only if using gas grill, turning
once, until just cooked through, 8-10 min. total.
Serve fish drizzled w/ some of chimichurri - serve remainder on side.
