Ingredients
- STOCK:
- 2 TBL olive oil
- 6 lbs turkey wings & necks
- 5 ribs celery, chopped
- 1 onion, chopped
- 1 head garlic, halved
- 12 C chicken broth
- GRAVY
- 1 stick unsalted butter
- 1/2 C all-purpose flour
- 8 C turkey stock
- 1 T apple cider vinegar
- S & P to taste

Preparation
Step 1
preheat oven to 400
SAUTE turkey wings & necks, celery, onion & garlic in roasting pan on
top of stove over med-high until beginning to brown
transfer to oven, roast 45min, then turn wings & necks over & roast
additional 45 min
ADD broth to pan & cook in oven for 1 hr or until reduced to 8 C
strain stock & set aside
MELT butter in lg. pot over med heat.
whisk in flour
cook 1-2 min, stirring constantly
GRADUALLY ADD strained stock, whisking until smooth
bring to boil
simmer 2 min to thicken, then reduce heat to med-low
simmer 10 min
finish w/ vinegar, S & P
TURKEY STOCK CAN BE MADE, COOLED & FROZEN FOR UP TO 6
MONTHS
GRAVEY CAN BE PREPARED 2-3 DAYS AHEAD - JUST REHEAT
IN SAUCEPAN OVER MED.
