  • 2 tablespoons (20g) chopped onion
  • 1 teaspoon olive oil
  • 1/2 pound (277 g) fresh spinach, washed
  • 2 cups (480ml) low sodium chicken or vegetable broth
  • 1-1/2 teaspoons cornstarch
  • 3 ounces (85g) tofu

Preparation

Step 1

In a large fry pan, sauté onion in olive oil over medium heat until translucent, about 4 minutes.. Add spinach and cover. Stir periodically to make sure spinach wilts evenly. Cook for about 5-minutes or until all spinach is wilted slightly.
Place all ingredients into the Vitamix container in the order listed, secure lid. Select Variable 1. Turn machine on and quickly increase speed to Variable 10, then to High. Blend for 3-4 minutes or until a heavy steam escapes from the vented lid.
