Mango Pudding

When mangoes are out of season, you can use dried mangoes soaked in soy milk overnight for this recipe.

Ingredients
- 1/4 cup raw almonds
- 2 ripe mangoes, peeled and cut into pieces
- 1 banana
- 3 pitted dates
- 1/8 cup unsweetened shredded coconut
- 1/2 tsp vanilla
- 1/4 cup currants
- 1/8 tsp cinnamon

Preparation
Step 1
Grind almonds in a high-powered blender and then add mangoes, banana, dates, coconut and vanilla and blend until smooth and creamy. Place in a bowl, stir in currants and sprinkle with cinnamon. Chill for at least two hours before serving. Makes 3 servings.
